Cuisine
Liberia
Liberian cooking is above all rice, cassava and palm oil, hot peppers and thick stews of cassava leaves, okra or palm butter. Settlers from America who founded the country in the 19th century brought customs from the southern United States, which is why sweet bakes and sweet potato pies also appear on the table. Jollof rice and fish in a hot sauce are festive classics.
