Cuisine
Dominica
Dominica is a mountainous green island whose Creole cooking relies on what its lush nature provides: dasheen and yam, breadfruit, bananas, fruit and fish. African, French and Indigenous Kalinago influences show in its soups, stews and coconut-milk dishes. The national delicacy used to be a frog known as “mountain chicken”, now protected, and callaloo soup has taken its place.
