About the dish

Minestrone is an Italian vegetable soup with no single fixed recipe – it takes whatever the garden or market has to offer. Usually that means onion, carrot, celery, courgette, potatoes, cabbage or kale, tomatoes and beans, with small pasta or rice added at the end. It is simmered slowly, often with a Parmesan rind that gives the broth depth. Minestrone can be as thick as a stew and is just as good lukewarm in summer as piping hot in winter. It is served with a drizzle of good olive oil and grated cheese.

Main ingredients

  • beans
  • carrot
  • celery
  • courgette
  • potatoes
  • tomatoes
  • small pasta

Italy: In Liguria minestrone is served with a spoonful of pesto, in Milan often with rice instead of pasta.

Method

  1. Finely dice the onion, carrots and celery and cook gently in the oil for 10 minutes.

  2. Add the diced potatoes and courgette, cook for a few more minutes, then pour in the tomatoes and water or stock. Drop in the Parmesan rind.

  3. Simmer, covered, for 30 minutes. Add the shredded kale and half the beans; mash the other half with a fork and stir it in to thicken the soup.

  4. Add the pasta and cook until al dente, about 10 minutes. Remove the rind and season with salt and pepper.

  5. Serve with torn basil, a drizzle of oil and grated Parmesan.
