About the dish

Mas huni is the classic Maldivian breakfast. Tuna – smoked, boiled or tinned – is broken up by hand with freshly grated coconut, finely chopped onion, hot chillies and lime juice until it forms a dryish, slightly sticky mixture. The name simply means fish with coconut: mas is fish and huni grated coconut. It is eaten with hot, thin roshi flatbreads, similar to Indian chapati, and strong sweet tea, often with an egg or fried fish on the side. Its simple ingredients, available on every island, have made it a dish known to everyone in the archipelago.

Method

  1. Drain the tuna and flake it finely with a fork or your fingers.

  2. Add the coconut, onion, chillies and lime juice, season with salt and rub everything together by hand for 1–2 minutes until combined and the onion releases its juice.

  3. For the roshi, knead the flour, salt, oil and warm water into a soft dough, cover and rest for 15 minutes.

  4. Divide the dough into 8 balls and roll each into a thin round about 18 cm across.

  5. Cook the breads in a hot dry pan for 30–60 seconds per side until brown-speckled, keeping them wrapped in a cloth.

  6. Serve the mas huni with the warm roshi – everyone scoops it up with pieces of bread.
