About the dish

The lamington is one of Australia's most familiar cakes: a square of buttery sponge dipped in thin chocolate icing and rolled in desiccated coconut. The name is usually linked to Lord Lamington, Governor of Queensland at the turn of the twentieth century. Lamingtons are served with tea and coffee, sold in every bakery, and schools and sports clubs have long held lamington drives, selling them to raise funds. A popular version is split and filled with strawberry or raspberry jam and cream.

Ingredients

24 servings

Method

  1. Heat the oven to 180°C and line a 20 × 30 cm tin with baking paper.

  2. Cream the butter and sugar until fluffy, beat in the eggs one at a time, then the vanilla.

  3. Sift the flour with the baking powder and fold it in, alternating with the milk.

  4. Spread the batter in the tin and bake for about 30 minutes until a skewer comes out clean. Cool, then chill in the fridge for 2 hours or overnight.

  5. Trim the edges and cut the cake into 24 squares.

  6. Sift the icing sugar and cocoa into a heatproof bowl and add the butter and milk. Stir over a pan of simmering water until smooth and runny.

  7. Dip each square into the icing on a fork, let the excess drip off and roll it straight away in the coconut.

  8. Leave the lamingtons on a wire rack for an hour until the icing sets.
