About the dish

Beef bourguignon is a classic French one-pot dish from Burgundy, a region known for its Charolais cattle and red wine. Chunks of a tougher cut, such as chuck, are browned and then braised slowly in wine and stock with herbs and vegetables until the meat is tender and the sauce thick and glossy. Fried bacon lardons, mushrooms and small onions go in at the end. It is a dish for cold days and family lunches, served with boiled potatoes, pasta or bread. Like many stews, it tastes even better the next day.

Method

  1. Pat the beef dry with kitchen paper and season with salt and pepper. Fry the bacon in a heavy casserole until browned, then lift it out.

  2. Add the oil to the bacon fat and brown the beef in batches on all sides, then set it aside.

  3. In the same fat soften the onion and carrots, add the garlic and tomato purée, then sprinkle over the flour and cook for another minute.

  4. Pour in the wine, scraping up the browned bits from the bottom, then add the stock, beef and bouquet garni. Bring to the boil, cover and simmer gently on the hob or in the oven at 150°C for 2½–3 hours.

  5. Towards the end of the braising, brown the mushrooms and small onions in the butter with a pinch of salt.

  6. When the beef is tender, remove the bouquet garni, add the bacon, mushrooms and onions and simmer together for 15 minutes more. If the sauce is thin, reduce it uncovered.

  7. Serve with boiled potatoes, pasta or crusty bread.
