Cuisine
Vanuatu
Vanuatu’s cooking is built on root crops – yam, taro and cassava – along with bananas, coconut, fish and pork. Its most important dish is laplap baked in an earth oven, and in the evenings people drink kava in nakamals. The days of joint British and French rule left behind baguettes and cafés in Port Vila, and beef from Espiritu Santo is known for its quality.
