Cuisine
Tonga
Tongan cooking is based on root crops – yam, taro and sweet potato – as well as fish, coconut and pork. Feasts matter most, with tables heaped with roast suckling pigs and food cooked in the ʻumu earth oven, especially on Sundays. Favourites include ʻota ʻika, raw fish in coconut milk, and lu, parcels of taro leaves with meat.
