Cuisine
Spain
Spanish cooking rests on olive oil, garlic, paprika, saffron, rice and seafood, along with superb cured meats such as jamón ibérico. Each region has its own character: Valencia is famous for rice, Andalusia for cold soups and fried fish, the Basque Country for pintxos, and Asturias and Galicia for hearty one-pot dishes. Meals are late, long and sociable – often a round of tapas shared at the bar.
