Papua New Guinea
Papua New Guinea is home to hundreds of peoples and languages, and to very different ways of cooking. In the Highlands the staple is kaukau sweet potato, in the lowlands and along the Sepik River it is sago palm starch, and everywhere there are taro, bananas, greens and coconut. Pigs carry great social importance and are eaten above all at ceremonies, when food is cooked together in a mumu earth oven.
