Cuisine
Chile
Chilean cooking draws on a long Pacific coastline – fish, shellfish and seaweed – and on the corn, beans and potatoes of the central valleys. It blends Spanish and Mapuche traditions, and in September, during the Fiestas Patrias, tables are piled with empanadas and grilled meat. The late-afternoon meal called once, with tea, bread and avocado, is a very Chilean habit.
